The restaurant will feature a grand seafood display with daily-flown delicacies, including whole fish preparations, Chef Mario Carbone's Spicy Lobster Meatballs, and signature dishes like Spicy Rigatoni Vodka. The experience will be enhanced by a unique Riva mini yacht service - one of only 18 produced "Anniversario" collection vessels - offering guests exclusive Fountains of Bellagio views.
Designed by Martin Brudnizki, CARBONE Riviera represents an evolution of the CARBONE brand, combining theatrical service with refined dining in what aims to become "the greatest seafood restaurant in the United States."
